Chinese Chews
- 4 large eggs
- 2 tbl vanilla
- 2 cups granulated sugar
- 1 1/2 cups cake flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 2 1/2 cups chopped pecans
- 2 cups dates, chopped into smaller pieces
Preheat oven to 350. Grease 9×13 inch baking pan with butter. In a mixing bowl on medium speed, beat eggs, vanilla and sugar until light and fluffy. Sift flour, baking powder and salt over the pecans and dates (this is important because it keeps nuts and dates in suspension) Gently fold into the egg and sugar mixture. Pour into the greased pan and bake for 40 minutes. Remove from oven, cool and cut into squares
