New Orleans School of Cooking - Pork Medallions

Ingredients

4-5 pounds pork loin
2 tsp seasoning
3 Tbsp chopped garlic
1/4 cup olive oil
2 limes
1/2 cup honey
2 tsp Joe’s Stuff Seasoning

Directions: Preheat oven to 350 degrees. Place pork in a bowl and rub with olive oil. Season pork with Joe’s Stuff. Place pork in a roasting pan and place the chopped garlic over the top, then squeeze the two limes over the pork. Cook pork 1 1/2 to 2 hours until the inside of the pork reaches 160-180 degrees. When you take the pork out of the oven pour the honey over the top and let set for approximately 10 minutes. Cut into 1/4 to 1/2 inch medallions. Enjoy!
