New Orleans School of Cooking - Pork Medallions

As requested by one of our Facebook friends, here is our Pork Medallion recipe out of the New Orleans School of Cooking’s Class Act Cookbook. Like us on Facebook to get coupons, cooking tips and recipes! Like Us!


4-5 pounds pork loin
2 tsp seasoning
3 Tbsp chopped garlic
1/4 cup olive oil
2 limes
1/2 cup honey
2 tsp Joe’s Stuff Seasoning

Directions: Preheat oven to 350 degrees. Place pork in a bowl and rub with olive oil. Season pork with Joe’s Stuff. Place pork in a roasting pan and place the chopped garlic over the top, then squeeze the two limes over the pork. Cook pork 1 1/2 to 2 hours until the inside of the pork reaches 160-180 degrees. When you take the pork out of the oven pour the honey over the top and let set for approximately 10 minutes. Cut into 1/4 to 1/2 inch medallions. Enjoy!
