National Fried Shrimp Day!

Happy National Fried Shrimp Day!

New Orleans School of Cooking Fried Shrimp

3 eggs
6 tsp. Joe’s Stuff Seasoning
12 ounces beer (try Abita beer if you can)
oil for frying
2 cups milk
2 pounds peeled shrimp (leave the tails on if you like)
2 cups all purpose flour

In a large bowl, beat together the eggs, beer and milk. Place the flour in a wide shallow bowl. Stir half of the seasoning into each bowl. Heat at least 3 inches of oil to 375 degrees in a deep fryer or large heavy pot. Coat the shrimp with the batter, using a slotted spoon to allow the excess batter to drain off, and dredge them in the flour mixture. Fry the shrimp in the basket until they are firm and golden brown, 2-3 minutes. Drain on paper toweling. Repeat the dredging and frying process for the rest of the shrimp.
