Holiday Sweets

Two very sweet recipes for the holiday: Beignets (Chef Michael’s Way) & Southern Egg Nog. Enjoy!

Beignets

Pinch Salt
2 cups flour
2 Tbsp baking powder
2 Tbsp sugar
2 Tbsp butter melted
2 Lg. eggs separated
4 Lg. McIntosh or Granny Smith Apples
1 ½ can beer (cold)

Peel, core and slice (1/4” thick) apples. Mix all dry ingredients. Add egg yolks and butter to dry mixture. Add beer slowly and mix until thick batter is created (may not need all the beer). Whip egg whites till stiff. Soften batter with a little of the egg whites. Gently fold in egg whites. Coat apple rings with batter and deep fry in clean oil. Sprinkle with powdered sugar. Serve hot. Drink the remaining beer. (It’s only 6 ounces!).

Southern Egg Nog

3 cups sugar
12 egg yolks
1 qt. whiskey
1 qt. heavy cream
dash nutmeg

Mix 3 cups of sugar with yolks of 12 eggs. Drip a quart of Kentucky whiskey into the mixture, stirring slowly and constantly. Whip one quart of heavy cream stiff and stir into whiskey mixture. Pour into glasses and sprinkle with nutmeg.
