Sweet Potato Biscuits

Because orange is this months color, I thought I would share a great Sweet Potato Biscuit Recipe. This recipe comes from the Crescent City Collection: A Taste of New Orleans. It is a great cookbook put together by the Junior League of New Orleans.

Yield: 12 Biscuits

2 Medium Sweet Potatoes

¾ Cup Milk

1 ¾ Cups Sifted Flour

1-Tablespoon Baking Powder

½ Teaspoon Salt

¼ Cup Chilled Shortening, Cut Into Pieces

Place the sweet potatoes in a baking dish and prick with a fork. Bake in the bottom third of the oven at 400 degrees for 45 minutes or until tender. Remove to a wire rack to cool slightly. Peel and mash the sweet potatoes. Place 1 cup of the mashed sweet potatoes in a bowl. Discard any remaining sweet potato or reserve for another use.

Add the milk to the sweet potatoes and mix well. Shift the flour, baking powder and salt into a large bowl. Cut in the shortening until the mixture resembles coarse meal. Make a well in the dry mixture and spoon the sweet potato mixture into the well. Stir until a dough begins to form. Place the dough on a heavily floured work surface.

Sprinkle the dough and your hands with flour and pat the dough ¾ inch think. Cut our biscuits with a floured 2 ½ inch biscuit cutter. Arrange the biscuits 1 ½ inches apart on an ungreased baking sheet. Bake at 400 degrees for 30 minutes or until light brown. Remove the biscuits to a wire rack to cool.
