2-3 fresh apples or pears or a combination of both, rough chopped, peeling optional
2 medium onions, finely chopped
2 tbsp. bacon fat
1 small to medium head of cabbage, roughly chopped
1/4 cup apple cider vinegar
1/4 cup light brown sugar
1/2 tsp. pepper (or to taste)
2 lb. corned beef brisket, shredded or cut into 1/2" cubes


Sauté fruit, onions and corned beef in bacon fat for about 5-6 minutes.

Add cabbage, vinegar, brown sugar and pepper.

Stir to combine and cook until cabbage is tender, as you like it.
